Country Mushroom Salad
Good Food

1 tablespoon mustard seeds
1 tablespoon oil
zest of half a lemon
1 pound button mushrooms, wiped and quartered
1 teaspoon parsley, finely chopped
3 mushrooms, sliced, for decoration

Dressing:
1/4 pint sour cream
1 tablespoon lemon juice
2 tablespoons paprika
2 tablespoons parsley, finely chopped
salt and pepper

Directions:
Heat oil in a pan. Add mustard seeds and heat carefully until they pop. Cool.

Mix dressing ingredients. Stir in mustard seeds and add mushrooms. Cover and chill for one hour. Spoon on to a serving dish and decorate with lemon zest, parsley and mushroom slices.

Serves 4.
