Hard Boiled Egg Dressing
Simon Says Cook!

2 hard cooked eggs
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
2 tablespoons minced chives, or a mix of chives and parsley
3 tablespoons extra virgin olive oil
3 tablespoons heavy cream
1 teaspoon sugar (optional)
salt and freshly ground black pepper

Directions:
Chop the eggs very fine or sieve them into a small bowl. In another bowl, whisk together the vinegar, mustard, chives, oil and cream. Add the sugar and season with salt and pepper to taste. Stir in the eggs.

Makes 6 to 8 servings.
