Fried Parsley

vegetable oil for deep frying
1 bunch of very fresh parsley, divided into sprigs, patted dry and long stems discarded

Directions:
In a deep fryer, heat 2 inches of the oil to 375°F and in it, fry carefully a small handful of the parsley sprigs, stirring, for 3 to 5 seconds, or until the oil stops sizzling. (The oil will spatter considerably).

Transfer the parsley with a skimmer to paper towels to drain and sprinkle with salt. Fry the remaining parsley in the same manner, making sure that the oil has returned to 375°F before adding each new batch.

Serve the fried parsley immediately as a vegetable with roast meats.

Serves 2 to 4.
