Thai Coconut Chicken Soup

1 cup coconut milk 1/2 cup water 1/2 boneless, skinless chicken breast, cut diagonally into 1/2 inch strips 2 to 3 tablespoons fresh lime juice 2 teaspoons oriental fish sauce (nam pla) 1 teaspoon minced fresh ginger 2 tablespoons minced scallion 2 teaspoons minced fresh coriander leaves pinch dried red pepper flakes Directions: Combine coconut milk, the water, chicken, lime juice, fish sauce, and ginger in a large microwave safe soup bowl. Cover bowl with plastic wrap, leaving one corner open for vent. Microwave on high power until chicken is cooked through, about 3 minutes. Sprinkle with remaining ingredients. Serves 1.
