Parsnip Crisps

2 tablespoons coarse salt
1/2 teaspoon dried oregano, crumbled
1/4 teaspoon dried thyme, crumbled
1/8 teaspoon freshly ground pepper
1 pound parsnips, peeled and shaved lengthwise into strips with vegetable peeler
vegetable oil for deep frying

Directions:
In a small bowl, combine well the salt, the oregano, the thyme, and the pepper.

In a deep fryer, fry the parsnip strips in batches in 2 inches of 350°F oil until they are just golden, and transfer them with a slotted spoon to paper towels to drain.

Sprinkle the salt mixture over the crisps and transfer the crisps to a serving basket.
