Pork Broccoli Delight

1 1/2 to 2 cups cooked, diced boneless pork 2 packages (10 oz each) frozen broccoli spears, or chopped broccoli, or 1 1/2 pounds fresh broccoli boiling salted water 2 cups seasoned toasted croutons 1 cup mayonnaise 1/2 cup sour cream 1/4 cup grated parmesan cheese Directions: Prepare pork from leftover roast or barbecued meat. Measure and set aside. Drop broccoli into boiling salted water. Cook 2 minutes. Drain thoroughly. If using fresh broccoli, break into flowerets and parboil 2 minutes. Drain. Sprinkle croutons in bottom of shallow, buttered 1 1/2 to 2 quart casserole dish. Top with broccoli. Mix pork with mayonnaise and sour cream. Spread over broccoli. Sprinkle with Parmesan cheese. Bake, uncovered, at 350°F for 20 minutes, or until lightly browned. NOTE: You may substitute cooked asparagus for the broccoli and cooked cubed chicken for pork, if desired. Serves 4.
