Kohlrabi Ramequine

1 pound kohlrabi
1/3 pound onions
4 garlic cloves, medium size
4 egg yolks
extra virgin olive oil
salt and black pepper to taste

Directions:
Peel and dice the kohlrabi. Cook the dices in the microwave oven at high for 6 to 7 minutes.

Chop the onion and the garlic together using a food processor. Fry the mixture in olive oil until it acquires a pale golden yellow color. Return the fried mixture to the food processor and add 3/4 of the kohlrabi, salt and black pepper, and egg yolks. Process until smooth.

Divide the remaining kohlrabi dices into 6 portions. Put a spoonful of the mixture into each ramekin, then a layer of kohlrabi pieces, then more of the mixture, followed by more kohlrabi pieces until the ramekins are 80% full.

Cook the ramekins in the microwave oven at high heat for 3 to 5 minutes, or until mixture solidifies. Turn each ramekin upside down to release its contents and serve with a wedge of lemon on top of each.

Serves 6.
