Zhejiang Celery with Peanuts

4 large stalks of celery 1/4 cup raw peanuts, shelled 1 teaspoon sesame oil 1 teaspoon vinegar 2 tablespoons fruit juice salt to taste Directions: Cut celery into 1/2 inch dice and blanch in boiling water for about 3 minutes. Rinse immediately in cold water and set aside. Place peanuts in a small saucepan and cover with cold water. Bring to a boil and simmer for 15 to 20 minutes until soft. Combine peanuts and celery and add sesame oil, vinegar, juice, and salt to the mixture, and toss until all the ingredients are well blended. Serves 4.
