Scottish Scones

1 cup graham flour (can use coarse stone ground whole wheat flour)
1/2 teaspoon cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup unsalted butter
1/3 cup light cream

Directions:
Preheat oven to 400°F. Mix flour, cream of tartar, baking soda, and salt. Cut in the butter until mixture is moderately fine. Stir in the cream.

Pat gently (do not roll) into a circular mound that is 1/2 inch thick at the edge and 1 1/2 to 2 inches thick at the center. Cut into 4 equal triangular pieces. Place well apart on a lightly oiled baking sheet. Brush with cream.

Bake for 15 minutes, until browned on top. Serve hot with honey if you wish.
