Broccoli Apple Soup

1 small onion, sliced thin 1 large Granny Smith apple 3 tablespoons unsalted butter 5 cups coarsely chopped broccoli 4 cups chicken broth 1/3 cup creme fraiche, sour cream, or plain yogurt 2 tablespoons snipped fresh chives Directions: In a kettle, cook the onion and the apple, peeled, cored, and sliced thin, in the butter over moderate heat, stirring, for 8 to 10 minutes, or until the onion is golden. Add the broccoli and the broth, and season the mixture with salt and freshly ground pepper. Bring the mixture to a boil, simmer it, covered, for 30 minutes. In a food processor or blender, puree it in batches. Pour the soup into bowls and garnish each serving with a dollop of the creme fraiche and some of the chives. Serves 6.
