Brussels Sprouts with Bacon
The Vegetable Bible

14 ounces Brussels sprouts
1 1/2 tablespoons butter
1 tablespoon diced cooked bacon
1 tablespoon diced finely chopped shallots
pinch of salt
pinch of white pepper
pinch of nutmeg

Directions:
Trim the Brussels sprouts and cut an "X" in the base of each. Cook in boiling salted water until tender. Sauté 1 tablespoon each of diced bacon and finely chopped shallots in the butter. Drain the Brussels sprouts, add to the pan, and toss in the butter. Season with a pinch of salt, white pepper and a pinch of nutmeg.

Serves 3.
