Garlic Marinated Carrots

2 tablespoons white wine vinegar 1 tablespoon olive oil 1/4 teaspoon salt 1/4 teaspoon pepper 5 cups coarsely shredded carrot (about 1 1/2 pounds) 4 cloves garlic, thinly sliced or crushed 1 bay leaf Directions: Combine first 4 ingredients in a large bowl; stir well with a wire whisk. Add carrot, garlic, and bay leaf; toss well to coat. Cover and chill at least 8 hours. Discard bay leaf before serving. Makes 5 servings. |
