4 eggs
2 teaspoons water
salt and pepper to taste
1 tablespoon butter
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh dillweed
1 tablespoon chopped fresh parsley
1 small tomato, coarsely chopped
6 slices (1/4 inch) brie cheese, to cover half the omelette
1 teaspoon water
Directions:
Beat eggs with water, salt and pepper until light and frothy. Melt butter in a 10 inch heavy skillet. Pour in egg mixture. Cover and cook gently over medium heat until almost set.
Layer remaining ingredients in order over half the omelette. Fold over omelette. Add water to pan, cover and cook until just done, approximately 5 minutes. Gently slide omelette onto warmed plate.
Makes 2 generous servings.
