Sun Dried Tomato Avocado Salsa

1/2 ounce sun dried tomatoes, packed without oil (about 6) 1 cup boiling water 1 1/4 cups diced plum tomato 3/4 cup peeled, diced avocado (about 1 large) 1/4 cup finely chopped purple onion 2 tablespoons chopped fresh basil 1 tablespoon peeled, finely chopped jalapeño pepper 2 tablespoons orange juice 2 teaspoons grated lemon rind 1/4 teaspoon salt 1/4 teaspoon pepper 1 clove garlic, crushed Directions: Combine sun dried tomatoes and boiling water in a small bowl; let stand 30 minutes. Drain and chop. Combine chopped sun dried tomato, plum tomato, and remaining ingredients in a bowl; stir well. Serve at room temperature with pork or chicken. Yield: 2 1/2 cups. |
