Crispy Cauliflower Slaw

1 cauliflower 1/4 cup minced green onions 1/2 cup minced celery leaves Dressing: 1 cup sour cream or plain yogurt 6 tablespoon salad oil 2 tablespoon cider vinegar or lemon juice 1/4 teaspoon paprika 1/8 teaspoon black pepper 1/8 teaspoon dry mustard salt to taste paprika to sprinkle on top chopped green onions for garnish 1 carrot, peeled and grated for garnish Directions: Immerse the cauliflower in cold salted water, head down, for about 10 minutes. Drain well. Remove the core and finely chop the cauliflower. In a large mixing bowl combine the cauliflower with the onions and celery leaves, mixing well. Combine the dressing ingredients in a separate bowl, blending well. Pour the dressing over the vegetables and toss gently but thoroughly. Cover and chill at least 1 to 2 hours to blend flavors. Transfer to a salad bowl. Sprinkle top with the paprika, green onions and grated carrot. Serves 4. |
