Scalloped Tomatoes
Lancaster County Amish Cookbook

3 cups crackers (coarsely crushed)
1 1/2 cup Velveeta cheese
salt and pepper to taste
2 cups milk
2 cups tomato chunks
1 teaspoon chopped onion
3 tablespoon butter
1 egg, beaten

Directions:
Mix crackers, tomatoes, cheese and onion. Add milk to the egg mixture and pour over. Add salt and pepper. Dot the top with butter. Bake at 375°F for 30 minutes.

Serves 4.
