3/4 cup all purpose flour
1/4 cup yellow cornmeal
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/8 teaspoon ground cumin
1 cup shredded zucchini
2 tablespoons vegetable oil
2 tablespoons honey
1 egg white, lightly beaten
1 teaspoon skim milk
vegetable cooking spray
Directions:
Combine first 6 ingredients; stir. Add zucchini to flour mixture; make a well in center of mixture.
Combine oil, honey, egg white, and milk; add to dry ingredients, stirring just until dry ingredients are moistened.
Spoon batter into muffin pans coated with cooking spray, filling two thirds full. Bake at 375°F for 20 minutes or golden.
Yield: 6 muffins (148 calories each)
