Macaroni and Four Cheeses

1 tablespoon unsalted butter 1 tablespoon all purpose flour 3/4 cup milk 1/4 teaspoon grated lemon zest (colored part of peel) 1/8 teaspoon freshly ground pepper pinch of salt 6 ounces penne or other tube shaped pasta, cooked 1/2 cup grated mozzarella cheese, preferably fresh 1/2 cup freshly grated parmesan cheese 1/4 cup diced Fontina cheese 2 tablespoons crumbled Gorgonzola cheese 1/4 cup minced red bell pepper 1/4 cup minced fresh parsley 1 tablespoon snipped fresh chives Directions: Microwave butter in a 4 cup glass measure on high power until melted, about 30 seconds. Add flour and whisk until smooth. Microwave uncovered on high power 20 seconds. Gradually whisk in milk. Microwave until thickened, about 2 minutes, then whisk until smooth. Stir white sauce and remaining ingredients, except chives, together in mixing bowl. Transfer to gratin dish or shallow casserole and cover with plastic wrap, leaving one corner open for vent. Microwave 5 minutes. Remove plastic, sprinkle with chives, and microwave 1 minute longer. Serve hot. Serves 2.
