Egg Filled Avocado Halves

3 hard cooked eggs, chopped 2 stalks celery, chopped or 1/2 cup chopped cucumber 2 avocados, halved and pitted lemon juice paprika tomato slices and lettuce leaves Dressing: 1 cup sour cream 1/2 tablespoon prepared mustard 1 teaspoon lemon juice 1/2 to 1 teaspoon curry powder Directions: Combine the eggs and celery or cucumber in a bowl. Brush the avocado halves with lemon juice to prevent darkening. Prepare the dressing by combining all ingredients in a separate bowl until well blended. Combine egg mixture with dressing. Fill avocado halves with the egg filling. Sprinkle with paprika. serve with tomato slices and lettuce leaves. Serves 4. |
