1 pound round or sirloin steak 1 tablespoon olive oil 2 onions, sliced 2 garlic cloves, minced 1 cup mild or medium salsa 1 cup beef broth 3 tablespoons lime juice 1 teaspoon cumin Directions: Pound steak with mallet and cut into 4 pieces. In a dutch oven, brown steak in oil over medium high heat. Add onions and garlic and cook until soft. Set aside. In a saucepan, combine salsa, broth, lime juice and cumin. Bring to boil and pour over steak, stirring to loosen brown bits on bottom of pan. Cover and bake at 300°F for 1 1/2 to 2 hours. Stir occasionally, adding more broth if necessary. Serves 4 |
