2 cups packaged buttermilk pancake mix
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
2/3 cup milk
1/3 cup molasses
1/4 cup sugar
2 tablespoons butter or margarine
Directions:
Grease a 9 inch pie plate, set aside. In a medium mixing bowl stir together pancake mix, cinnamon, and ginger. Remove 1/3 cup of the dry ingredients and set aside.
In a small mixing bowl stir together milk and molasses. Add to dry ingredients, stirring just till moistened. Do not over mix. Transfer batter to prepared pie plate, spreading evenly over the bottom.
For crumb topping, in a small mixing bowl combine the reserved dry ingredients and sugar. Cut in butter or margarine till mixture resembles coarse crumbs. Sprinkle crumb topping over batter. Bake in a 350° oven about 25 minutes or till a wooden toothpick inserted near center comes out clean. Serve warm or cool.
Makes 8 servings.
