Goofed Up Pancakes

4 large eggs
packaged pancake mix for 6 servings
2 tablespoons butter, margarine, or vegetable cooking spray
salt and pepper to taste for eggs

Directions:
Prepare pancake mix according to directions.

In one preheated lightly greased griddle or skillet, drop the pancake batter so the cakes will be approximately 6 inches in diameter. Let cook until the top becomes bubbly and the edges dry. At the same time, season and drop the eggs into another preheated lightly greased skillet, until the underside becomes firm.

It is important that the pancakes be almost cooked through before you place the egg, cooked side down, on top of the uncooked side of the pancake, and flip. Cook until desired doneness. Timing depends on how you like your eggs.

Yield: 4 large goofed up pancakes.
