Toasted Sesame Noodles
Bon Appetit

salt to taste
8 ounces vermicelli (fine spaghetti)
1 tablespoon vegetable oil
2 tablespoons sesame seeds
1 scallion, thinly sliced on diagonal

Directions:
Heat large pot of water to boiling for noodles. Salt water, add pasta and cook until tender, but still firm to the bite (al dente).

Meanwhile, heat oil in medium skillet over medium high heat. Add sesame seeds and cook, stirring constantly, until fragrant, about 3 minutes. Drain pasta, add to skillet, and toss quickly to coat with seeds and oil.

Divide noodles amoung dinner plates and sprinkle with scallions. Serve hot.

Makes 4 servings.
