2 tablespoons avocado oil or salad oil
2 tablespoons raspberry vinegar
2 teaspoons honey
1/2 teaspoon snipped fresh mint or pinch dried mint, crushed
4 leaves red tipped leaf lettuce
2 cups shredded red tipped leaf lettuce
1 large avocado, seeded, peeled and thinly sliced
2 medium oranges, peeled and sectioned
1/4 cup red raspberries or sliced strawberries
Directions:
For vinaigrette, in a screw top jar combine avocado oil or salad oil, raspberry vinegar, honey and mint. Cover and shake well. Line 4 salad plates with lettuce leaves. On each plate arrange shredded lettuce, avocado slices, orange sections, and raspberries or strawberries.
Shake vinaigrette well; pour over each salad.
Makes 4 servings.
