Noodles and Gravy

2 eggs
1 teaspoon salt
1 cup all purpose flour
4 cups simmering meat or poultry stock

Directions:
Beat the two eggs and salt in a medium bowl. Be in the flour then roll out dough on a work surface dusted with 1 cup flour, folding and rolling until most of the flour has been incorporated and dough is very thin.

Cut into 3 inch wide strips, stack strips, then cut into 1/16 inch wide noodles. Toss noodles in flour and cook in 4 cups of simmering meat or poultry stock in a large covered pan over medium-low heat, stirring occasionally, until tender, about 15 minutes. Ladle over mashed potatoes.

Serves 8
