Skillet Okra and Vegetables

1 medium green sweet pepper, chopped (3/4 cup) 1 medium onion, chopped (1/2 cup) 2 cloves garlic, minced 2 tablespoons margarine or butter 2 large tomatoes, peeled and chopped (2 1/2 cups) 1/2 pound okra, cut into 1/2 inch thick pieces (2 cups) 1 cup cut fresh corn 1/4 teaspoon salt 1/8 teaspoon paprika 1/8 teaspoon ground red pepper 3 slices bacon, crisp cooked, drained, and crumbled Directions: In a large skillet cook green pepper, onion, and garlic in margarine or butter till onion is tender but not brown. Stir in the tomatoes, okra, corn, salt, paprika, and red pepper. Cook, covered, over medium low heat about 20 minutes or till okra is tender. Sprinkle with crumbled bacon. Serves 4. |
