Beer Pancakes

2 cups packaged biscuit mix
2 tablespoons sugar
1/2 teaspoon ground cinnamon
dash of nutmeg
5 beaten eggs
1/2 cup beer
2 tablespoons cooking oil, butter or margarine
Maple flavored syrup

Directions:
Stir together packaged biscuit mix, sugar, cinnamon, and nutmeg. Combine beaten eggs, beer, and cooking oil. Add egg mixture all at once to dry ingredients, stirring just till moistened. (Batter will be lumpy.) Add a little additional beer if thinner pancakes are desired.

For pancakes, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet. Cook till golden brown, turning to cook the other side when pancakes have a bubbly surface and slightly dry edges. Serve pancakes warm with butter or margarine and maple flavored syrup.

Makes 10 to 14 (4 inch) pancakes.
