Colonel Talbot's Bourbon Punch
Food & Wine's Holiday Favorites


1 cup sugar
1 cup water
10 whole cloves
2 cinnamon sticks
2 liters bourbon
2 cups applejack or other apple brandy
2 cups orange liqueur, such as Grand marnier
2 tablespoons aromatic bitters, such as angostura
3 seedless oranges, halved and cut into thin slices
1 lime, cut into thin slices
2 apples, cored, seeded, and cut into 1 inch cubes
1 cup strong, fresh brewed tea
1 quart club soda

Directions:
In a small saucepan, combine the sugar and water. Bring to a boil over moderately low heat. Cook, stirring to dissolve the sugar, for 5 minutes. Add the cloves and cinnamon sticks, remove from the heat, and let cool.

In a large punch bowl, combine the bourbon, applejack, orange liqueur, aromatic bitters, the orange and lime slices, the apple cubes, and the tea. Add the syrup and let stand, covered, at least 30 minutes.

Just before serving, uncover the punch, add ice, and pour in the club soda.
