Easy Refrigerator Pickles
Cooking Light, Five Star Recipes

6 cups thinly sliced cucumber (about 2 pounds)
2 cups thinly sliced onion
1/1/2 cups white vinegar
1 cup sugar
1/2 teaspoon salt
1/2 teaspoon mustard seeds
1/2 teaspoon celery seeds
1/2 teaspoon ground turmeric

Directions:
Place half of cucumber in a large glass bowl; top with half of onion. Repeat layering procedure with remaining cucumber and onion.

Combine vinegar and remaining 5 ingredients in a saucepan; stir well. Bring to a boil; boil 1 minute.

Pour vinegar mixture over cucumber and onion; let mixture cool. Cover and marinate pickles in refrigerator 4 days. Store in refrigerator up to 1 month.

Yield: 6 1/2 cups.
