3 eggs, separated
1 cup sugar, divided
1 lime, juice and grated rind
1/2 cup rye whiskey
1/8 teaspoon cream of tartar
1 cup whipping cream
mint leaves and some lime rind to garnish
Directions:
In a large bowl, beat egg yolks and 1/2 cup sugar until creamy. Add lime juice, most of rind (save some for garnish) and whiskey. In a small bowl, beat egg whites until peaks start to form, add cream of tartar and beat until peaks are stiff.
Fold egg white mixture into yolk mixture. Beat cream with remaining sugar until stiff. Fold into egg mixture and pour into individual glasses. Freeze 4 hours or overnight. Remove from freezer and place in refrigerator 1 hour before serving. Garnish with a mint leaf and a sprinkle of lime rind.
Serves 4 to 6.
