Potato Onion Pancakes

4 medium potatoes
1 medium onion
2/3 cup shredded Swiss cheese
1/2 teaspoon salt
dash black pepper
dash ground nutmeg
1/3 cup melted butter

Directions:
Peel potatoes. Peel and chop onion. Shred potatoes hair fine julienne. Drain well on a towel. Mix potatoes, onion and cheese. Add salt and pepper and nutmeg. Heat part of the butter in a pan.

Spread and press part of mixture into pan in a thin layer. Cook until bottom is browned. Loosen edges with spatula as you would with a pancake. Turn and brown the other side. Repeat with remaining mixture.

Makes 4 servings.
