Chili Con Queso Dip
Esthar Vaughn Does Her Thing Vol.2

2 bacon slices, cut into strips
3 tablespoons chopped green onion
1 large tomato, peeled and chopped
1/2 cup chopped canned green chilies
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon dried oregano, crumbled
8 ounces sharp cheddar cheese, grated (2 cups)
8 ounces American cheese, grated (2 cups)
3 tablespoons tomato juice (optional)
minced fresh cilantro
Tortilla Chips

Directions:
Fry bacon in flameproof serving dish over medium heat until crisp. Add onion and tomato and cook until onion softens, stirring occasionally, about 5 minutes. Stir in next 4 ingredients.

Reduce heat to low. Gradually add cheeses, stirring until melted and bubbling. Thin with tomato juice if desired. Garnish with cilantro. Serve immediately with Tortilla Chips.

Makes 4 cups.
