Cheese Soup La Casa

1 1/2 cups peeled, seeded, and chopped tomatoes
1/4 cup chopped onion
1 tablespoon fresh oregano or 1 teaspoon dried
2 fresh jalapeno peppers, seeded if desired and chopped
4 cups canned chicken broth
1/4 cup chopped fresh coriander leaves
1/4 cup minced scallions
1 1/2 cups grated jack cheese
1/2 cup grated sharp Cheddar

Directions:
In a blender, blend the tomatoes, the onion, the oregano, and the peppers until the mixture is smooth. In a saucepan, combine the stock and 2/3 cup of the tomato mixture, reserving the remaining mixture for another use, bring the mixture just to a boil, and stir in the coriander and the scallions

Divide the cheeses among 4 soup bowls, ladle the soup mixture over them, and serve the soup immediately.

Serves 4.
