vegetable cooking spray
1 1/2 cups chopped low sodium 96% fat free ham (about 1/2 pound)
2 cups all purpose flour
2 teaspoons baking powder
1 cup (4 ounces) shredded extra sharp Cheddar cheese
dash of ground red pepper
1 cup 1% low fat milk
Directions:
Coat a medium nonstick skillet with cooking spray; place over medium heat until hot. Add ham; saute 3 minutes. Combine ham, flour, and next 3 ingredients in a bowl. Add milk, stirring just until dry ingredients are moistened.
Drop biscuit batter by heaping tablespoonfuls onto a baking sheet coated with cooking spray.
Bake at 400°F for 22 minutes.
Yield 1 dozen (serving size 1 biscuit)
