Broccoli Savoyarde

1 bunch of broccoli (1 1/4 to 1 1/2 pounds) 1 quart of water 1 teaspoon salt 4 eggs 2 cups milk 1/8 teaspoon nutmeg pinch of freshly ground pepper 1 cup grated Swiss cheese 1 teaspoon cornstarch, sifted 1 tablespoon butter Directions: Preheat the oven to 400°F. Wash and trim broccoli and cut into flowerets about 2 inches across. Bring water to a boil and add 1/2 teaspoon of the salt. Add broccoli and cook 10 minutes, uncovered. Drain in a colander and rinse with cold water. Reserve. Beat together the eggs, mil, remaining 1/2 teaspoon salt, nutmeg, pepper, cheese, and cornstarch. Butter a 2 quart casserole and put broccoli into it. Pour the custard over the broccoli. Bake 20 minutes, or till custard is set and the top is a little puffy. Serve immediately. Serves 4.
