Curried Pea Fritters with Coriander Dipping Sauce

Sauce: 1/2 cup plain yogurt 2 tablespoons chopped fresh coriander 1 teaspoon fresh lime juice Fritters: 1/2 cup all purpose flour 2 teaspoons curry powder 1 teaspoon ground cumin 1/4 teaspoon cayenne 1/2 teaspoon double acting baking powder 1/4 teaspoon salt 1/2 cup plus 2 tablespoons seltzer 1/4 cup finely chopped scallion 1 cup shelled fresh peas (about 1 pound unshelled), cooked or, frozen peas, thawed vegetable oil for deep frying Directions: Make the sauce: In a small bowl, stir together the yogurt, the coriander, the lime juice, and salt to taste. Make the fritters: In a bowl, stir together well the flour, the curry powder, the cumin, the cayenne, the baking powder, and the salt. Add the seltzer, and stir the batter until it is combined well. Stir in the scallion and the peas. In a large deep skillet, heat 1 inch of the oil to 375°F on a deep fat thermometer. In it, fry tablespoons of the batter in batches, turning the fritters, for 2 minutes, or until they are golden and crisp. Transfer them as they are cooked to paper towels to drain. Sprinkle the fritters with salt if desired and serve them with the sauce. Makes 30.
