Cuban Roast Pork with Lime

a 4 pound pork loin
3 large garlic cloves, sliced
1 tablespoon dried oregano, crumbled
1/3 cup fresh lime juice
1/2 teaspoon freshly ground pepper
1 1/2 teaspoons salt
rice and black beans as accompaniments if desired

Directions:
In a bowl just large enough to hold the pork, combine the pork with the garlic, the oregano, the lime juice, and the pepper and let it marinate, covered and chilled, turning occasionally, overnight.

Let the pork come to room temperature, transfer it to a roasting pan, discarding the marinade, and season it with the salt.

Roast the pork, covered loosely with foil, in the middle of a preheated 350°F oven for 1 hour, then roast it, uncovered, for 1 hour and 30 minutes more.

Transfer the pork, uncovered, to a platter, let it stand for 10 minutes before carving, and serve it with the rice and beans.

Serves 6.
