Roasted Asparagus With Orange Scented Onions

2 cups slivered onions 1 tablespoon water 1 teaspoon chopped fresh thyme 1 teaspoon olive oil 2 2 1/2 pieces orange rind, cut into thin strips dash of freshly ground pepper 1 1/2 pounds fresh asparagus 1 teaspoon olive oil Directions: Combine onions, water, thyme, olive oil, and orange rind in a 13 by 9 inch baking dish; stir well. Cover and bake at 400°F for 45 minutes or until onions are golden and tender. Remove from oven. Stir in pepper; push onion mixture to side of dish. Snap off tough ends of asparagus; remove scales with a knife or vegetable peeler, if desired. Add asparagus to dish; drizzle with 1 teaspoon oil, tossing gently. Spoon onion mixture over asparagus. Cover and bake at 350°F for 15 minutes or until asparagus is crisp tender. Serves 4.
