Fillet of Beef with Cilantro Lime Sauce

1/2 fillet of beef, trimmed (about 2 1/2 to 3 pounds) 2 tablespoons olive oil 1 tablespoons cracked black pepper Cilantro Sauce: 1 cup cilantro leaves 1/2 cup parsley leaves juice and zest of 2 limes 1 garlic clove, crushed 1 tablespoon Dijon mustard 1/4 cup olive oil 1 1/4 cup cornichons 1 teaspoon ground coriander Directions: Preheat oven to 450°F. Rub fillet with olive oil and pepper. Roast 20 to 25 minutes for rare. Cool; refrigerate. For Sauce: Combine all ingredients in a blender and process until leaves are roughly chopped and ingredients are blended. Refrigerate until ready to serve. Serve cold. Serves 6.
