Dutch Genever Cheese Soup

4 cups unsalted chicken broth 5 eggs 1/4 cup whipping cream 1 1/3 cups grated Gouda cheese (about 4 ounces) can use Edam, Gruyere or Cheddar 1/2 cup finely chopped Dutch or other lean ham 3 tablespoons Dutch genever or English gin (optional) 2 tablespoons snipped fresh chives croutons (optional) Directions: Bring chicken stock to boil in heavy large saucepan. Beat eggs and cream in large bowl until smooth. Stir in grated cheese and chopped ham. Slowly pour cheese mixture into boiling chicken stock, stirring constantly. Pour in gin if desired, stirring to incorporate. Ladle into bowls. Garnish with chives and croutons if desired. 4 servings.
